Eggplant Pizza

Ingredients
Ingredients:*Turkey, Ground turkey, 93% lean, 9 oz Eggplant, fresh, 1 eggplant, unpeeled and sliced into 3in high slices *Extra Virgin Olive Oil, 2 tbsp Feta Cheese, 1 cup, crumbledSalt, 1 tsp *BLACKPEPPER, 1 tsp *2% Mozzerella, 0.10 cup Contadina Spaghetti Sauce, 1 cup
Directions
Preheat oven to 425 degrees F. then mix your virgin olive oil , salt, black pepper together. then slice up your eggplant, lay on a cookie sheet brushing on your oil,salt and pepper mix on to the eggplant slices. then stick them in the oven to bake a bit while yo ground up your turkey, then once your turkey is done keep it on low to simmer while you flip your eggplant slices 1 time and bake till lightly golden brown after brushing with your oil mixture. then when golden brown pull out the eggplant slice and take a teaspoon of spaghetti sauce (or pizza sauce) and put it on the eggplant slices useing the back of the teaspoon to spread on the sauce, then with the teaspoon put a teaspoon of turkey on each eggplant slice, then sprinkle on the teaspoon of feta cheese, then sprinkle on you mozzerella cheese and bake for 20 min or untill golden brown. Take out and serve hot. And Enjoy
