Herbed Rice Pilaf

Ingredients
2Tbsp unsalted butter1Tbsp olive oil1/3 cup chopped yellow onion1tsp minced garlic11/2 cups Basmati rice3/4 tsp salt1/4 tsp pepper3 cups chicken stock1 cup frozen peas2Tbsp finely chopped fresh parlsey (optional)1Tbsp finely chopped mint (optional)
Directions
Melt butter and oil in a medium saucepan over med-high heat. Add the onions and cook for three minutes. Add the garlic and cook stirring for 30 seconds. Add the rice, salt, pepper and cook stirring until rice is glossy, about two minutes. Add the stock and bring to a boil. Reduce heat to low, cover and cook until almost all the liquid is absorbed, about 10 minutes. Add the peas without stirring. Cover and continue cooking until all the liquid is absorbed, about 4 minutes. Remove from heat and let sit covered without stirring about 15 minutes.
Fluff with a fork add the parsley and mint and stir to combine.

    This is a great recipee, for LBCANN to say it was to dry is rediculous as rice pillaf, or any kind of rice unless buttered is suppose to be dry. Great Recipe! - 4/8/09

    I made this, however it was a little dry so we added some soy sauce and it was very good. I would make it again. - 1/28/08
