Ingredients
1 lb potatoes (yukon gold is best)1 cup cauliflower1 parsnip1/2 cup chicken broth3 TBSP nonfat plain yogurt
Directions
makes eight 1/2 cup servings

boil all veg until fork tender, adding cauliflower towards end of cooking as it cooks much faster than other veg. mash w/ masher or electric mixer. blend in liquids. continue to blend until it is the consistency of "normal" mased potatoes.
