Thai Chicken Soup

Ingredients
2 lb chicken breasts1 onion, dicedgarlic, 3 clovesginger 1 tsp fresh1 cup bell peppers1 can light coconut milk2 tsp chicken bouillion2 cups water
Directions
Season chicken to taste and broil 10-12 min each side.
Saute onions, garlic, ginger for a few minutes, until soft, then add bell peppers and saute tll soft.

Add curry paste, coconut milk, chicken bouillion, and 2 cups water. Simmer for 5 minutes.

Once chicken is done, dice into cubes and add to soup pot.

Serve over rice (recipe does not include rice).
