Rwandan Venison Stew

Ingredients
1 T olive oil.5 C chopped onion1 lb. ground venison (or meat of your choice)1.5 C fresh spinach (more is ideal, but that is all I had)2 C tomato saucerounded .25 C peanut butter
Directions
Fry the onion in the oil. When onion is soft, add meat. Break up meat and cook until browned. Then add spinach and stir until wilted. Next, add tomato sauce. Be sure to scrape up any browned bits from the bottom of the pan. Simmer a few minutes, then add in peanut butter, stirring well until all the peanut butter is mixed in. May serve immediately or leave to simmer a couple minutes more. Serve over rice. (Try grating carrots into the rice before cooking it - delicious Rwandan method!) Makes 4 servings.
