Easy Spinach Omelet

Ingredients
2 large eggs1 oz mozzarella cheese2 tbsp onions, chopped1/3 cup spinach, fresh
Directions
1. Heat small skillet over medium heat. Spray with cooking spray.
2. Saute onions and spinach until tender. Remove from skillet and set aside.
3. Beat eggs and add to skillet. Cook til set.
4. Add spinach, onions and cheese. Continue cooking and fold omelet in half.
5. Cook til cheese melts.

    Loved it with salsa on top. Not sure if the calories are correct. Aren't whole eggs 70 calories each and mozzarella 70 calories per ounce? That would make it 210 calories, plus the few for the veggies? - 5/27/10
