Potato Soup for Slow Cooker

Ingredients
5 large potatoes, peeled and cubed1 large onion, roughly chopped2 celery stalks, sliced2 T "Better than Boullion Vegetable Base"6 cups tap water1 t salt1 t black pepper1/3 cup Country Crock Light1 12 oz can fat free evaporated milk1/2 cup 2% shredded cheddar cheese
Directions
Mix boullion according to directions. Chop and peel all veggies and put in slow cooker. Add all other ingredients except milk and cheese. Cover, cook on high 3-4 hours, stirring in milk during last hour. Garnish with cheese.

You could garnish with chives, and if you didn't care if it was vegetarian, you could use chicken stock and bacon.
