Boneless-Skinless Chicken BreastsMozzarella CheeseTomatoes (Cherry or otherwise)Olive OilItalian Seasoning to taste
1. Preheat oven to 350 degrees.
2. Pound out chicken breasts until 1/4 inch thin.
3. Marinate cut tomatoes in 2 Tbsps of olive oil and italian spices.
4. Put 1oz of cheese and 1/3 of the tomatoes on each flat chicken breast.
5. Tie with twine or secure with toothpick.
6. Bake in oven for 40 minutes or until inside is no longer pink.
Makes 6 - 1/2 breast servings.
