Laksa Paste

6 x Red Chillies2 x Shallots5 x Candlenut2 x Stalks of Lemongrass2 x tbsp Peanut Oil1 1/2 tsp Tumeric1 x tbsp Shrimp Paste1 x Clove of Garlic
To make the paste, place the dried chilies in a heatproof bowl, Cover with boiling water and set aside for 20mins to soften.
Drain and chop the chillies coarsely. Place chilli, eschalot, candlenuts, galangal, lemon grass, oil, turmeric, shrimp paste and garlic into a food processor and process until finely chopped. (Note: for best result pound this into a pulp in your mortar and pestle)
This paste is not eaten, but is used in the Laksa Soup recipe.
