Crispy oatmeal Cookies with Almond butter

Ingredients
1/2 cup butter1 cup flour1 cup white sugar1 cup brown sugar4 tbsp almond butter1/2 tsp salt1 tsp baking soda1 tsp cinnamon2 tsp vanilla extract2 large eggs3 cups oatmealhandful of butterscotch or chocolate chips (optional)
Directions
Makes about 70 tbsp round cookies.
Melt the butter and add flour gradually to coat - cook for 3 minutes on medium stirring constantly.. Remove and let cool completely.
Preheat Oven to 350 celcius. In food processor, combine everything except eggs, cooled roux and oatmeal. Add eggs, and process until smooth. Add roux, mix, then oatmeal and any optional ingredients.
Dough may appear dry, try to make a ball. If it's OK, continue. If not add a little milk.
Drop rounded teaspoons onto cookie sheet, press in hand if necessary.
Bake for 8 minutes until golden.
