Slow Cooker Chicken and Dumplings

1 pound boneless skinless chicken breasts, cut into 1" cubes1 bag (10 oz) frozen mixed vegetables1 medium onion chopped (approx. 1 cup)2 12 ounce jars fat-free low sodium chicken broth1 1/2 cups all-purpose baking mix (Bisquick)
1) Combine chicken, vegetables, onion, and chicken broth (reserve 1/2 cup plus 1 Tbs broth for later use) in slower cooker.
2) Cover. Cook on high 2 hours.
3) mix baking mix with reserved broth until moistened. Drop by tablespoonfuls over hot chicken and vegetables.
4) Cover. Cook on high 10 minutes.
5) Uncover. Cook on high 20 minutes more.
