Shrimp Curry

Ingredients
1 Tbs olive oil1 cup chopped onion4 minced garlic cloves1 Tbs curry powder4 chopped carrots1 can light coconut milk1 cup chicken broth2 cups frozen peas1lb large raw shrimp
Directions
Heat olive oil over medium heat in frying pan. Saute onion, garlic and curry powder in pan for about 2 minutes until onion is soft. Add carrots, coconut milk and broth. Stir and bring to a boil. Boil for about 5 minutes until carrots are tender. Add peas and simmer for about 2 minutes. Add shrimp and cook uncovered for about 3 minutes, until shrimp turn pink. Stir. Serve over rice. Serves 4.
