Marinated Roast Lamb

Ingredients
3-pound boneless lamb roast2 garlic cloves2 tablespoons fresh rosemary leaves2 tablespoons fresh thyme1/2 cup Dijon mustard2 tablespoons light soy sauce1 teaspoon black pepper
Directions
In a food processor, combine garlic, rosemary, thyme, mustard, soy sauce, and pepper to make a paste. Completely cover lamb roast with paste. Cover and marinate in refrigerator for at least 1 hour (or overnight).

Preheat oven to 325 degrees F. Place roast, fat side up, in roasting pan. Roast for approximately 25-30 minutes, or until internal temperature reads 140 degrees (medium rare). Cover with foil and let stand for 15 minutes before carving.
