2 tsp fennel seeds2 garlic cloves, crushed1/2 tsp salt, preferably coarse or kosher1/4 tsp freshly ground black pepper1 boneless pork loin end roast
Preheat oven to 400. Crush fennel coarsely in mortar or with knife. Combine fennel, garlic, salt, and pepper. Rub mixture over surface of pork. Place in 13 x 9 baking dish. Roast for 30 min. Turn over. Continue roasting until well browned, 30 min. Let stand for 10 min. Cut into thin slices (1/8 in). Spoon pan juices over meat.
