Whole Wheat Vegan Sausage & Veggie Calzone

1 bag Trader Joe's Whole Wheat PIzza Dough2 oz Trader Joe's Soy Mozzarella Cheese4 oz Gimme Lean Ground Sausage Style3 cup Spinach.5 cup Tomato Paste (so salt added variety)1 cup Zucchini, sliced2 tbsp minced garlic2 tsp Mrs. Dash Garlic and Herb2 tsp Crushed Red Pepper Flakes (more or less, to taste)1 tsp olive oila bit of whole wheat flour (for dusting your work surface)
Preheat oven to 400 degrees F.
Cook your spinach until wilted and set aside. Grill or pan-sear your zucchini slices and set aside. Crumble the Gimme Lean sausage and cook in a pan if desired, and set aside.
Split the dough into two equally-sized portions.
Dust your working surface with flour and roll/stretch one portion of the dough into a circle, as if making a miniature pizza. On half of the dough circle, layer half of each ingredient (except olive oil) however you'd like. *Note: Make sure you have about 1/4-1/2 inch perimeter!* Fold the other side of dough over and form into a moon shape. Roll the edges together and press down with a fork to seal.
Repeat this with the other half of the dough and toppings.
Place both calzones on a lightly floured baking sheet or pizza stone. Brush olive oil on top of each calzone.
*If they get brown too soon, cover with foil!*
Bake for 20-25 minutes or until golden brown.
Makes two calzones. One serving = 1/2 calzone.
