Ingredients
2 cups pumpkin1 cup fat free evaporated milk1 cup sugar1/2 cup flour2 eggs1 teaspoon vanilla extract1/2 cup butter1/4 teaspoon cinnamon
Directions
Preheat oven to 350 degrees. Combine al ingredients. Spoon into a casserole dish. Bake for 1 hour.

    I used soymilk in this and it turned out great, would make again. I also used a buttercup squash which tastes pretty much the same as pumpkin but maybe a touch sweeter. We enjoyed the recipe. - 1/6/12
