Ingredients
6 tablespoons unsalted butter melted3/4 cup brown sugar packed1/3 cup white flour1/3 cup whole wheat flour3/4 teaspoon of baking soda11 1/2 cups Hy-vee old-fashioned oats1/2 teaspoon salt1 egg1 teaspoon vanilla1/2 cup chopped walnuts3 ounces of semi-sweet chocolate chunks chopped
Directions
Preheat oven to 350 degrees. Melt butter in a small saucepan. Remove from heat and stir in brown sugar until smooth. Combine flours, soda, old-fashioned oats and salt in a medium bowl. Combine butter and dry mixture and then add lightly beaten egg and vanilla. Fold in walnuts and chopped semi-sweet chocolate. Mix well and drop tablesppons of mixture on lightly greased cookie sheets.
Bake for 12 minutes or until tops are dry to the touch. Makes 32 cookies.

    I got this same recipe from Health Magazine in an article on the best antioxidants. It's delicious!! It's even better to use bittersweet chocolate rather than semi-sweet. - 8/26/10
