Split pea soup with ham

1 tbsp olive oil1 cup chopped onion5 oz diced ham, trimmed of fat2 cups split peas1 small russet potato (about 100 grams)4 cups low sodium chicken broth2 medium carrotsSalt and pepper to taste (recipe calc for 1/2 tsp kosher salt)
Saute onions and ham pieces in olive oil in a large pot until onions are soft and ham is very brown and crispy. Add peas, broth and potatoes -- add enough water to cover. Simmer for 45 mins - 1 hour until peas are very soft. Add more water as necessary. Mash with a potato masher, or give a few blasts with an immersion blender. Season with salt and pepper. Steam the carrots in the microwave for a few minutes, then add to the blended soup. Cook for another 15-20 minutes, until carrots are soft and flavors combined.
Makes 6 2-cup servings. Delicious with croutons, cheese, crackers, crispy bread or just on its own.
