Coolio Cookies

Ingredients

1 cup butter (I used whipped butter)1 cup powdered xylitol2 cups tapicoa flour1/2 tsp baking soda1 egg1 tsp vanilla2 tsp xantham gum
Preheat over to 350 degrees F
Cream margarine until fluffy.
Beat in sugar then egg, and vanilla.
Add flour, baking soda, xanthan gum, and mix.
Shape dough into 1-inch balls and arrange 2" apart on a light greased cookie sheet. Flatten with the tines of a (wet) fork.
Bake 10-12 minutes until light brown.
Makes about 20-25 cookies.
