Spanish Rice

2 cups white rice, long grain (uncooked)3 1/2 cups chicken stock1/2 large yellow bell pepper (diced)2 cloves garlic (chopped)1/4 cup white wine1 pinch saffron2 tbsp olive oil
In large pot, heat up olive oil. Saute yellow pepper and garlic until peppers begin to wilt. Add in the white wine and cook for 30 seconds to burn off the alcohol.
Add in the uncooked rice and saute until the rice starts to lose its opaque color. Pour in the chicken stock and add in the saffron. Bring the mixture to a boil and then cover. Reduce the heat to low and let simmer for 20 min.
Once done, uncover and let stand for 5 min before fluffing the rice.
This will yield approximately 6 1-cup servings
