Brown Rice Risotto

6 tbsp olive oil1 med sweet onion1 med portabello mushroom2 lg cloves garlic2 cups Trader Joe (Lundberg Farms short grain brown rice)1 carton (32oz) low sodium chicken broth2 Trader Joe Chicken Garlic sausages (precooked)1 pinch saffron1 pinch salt1 tbsp basil2 pinch salt1/2 cup parmesan cheese
Saut�e garlic, onion and chopped mushroom together until onion is translucent and slightly beginning to brown around the edges. Add 2 cups brown rice, keep stirring until rice turns opaque. Add entire carton of chicken broth and chopped up sausages. Lower heat to medium. Add pinch of saffron, pinch of salt, and chopped basil. Stir frequently as it boils down. After an hour or so, rice will appear creamy. If the water begins to boil out and the rice isn't done, add just enough water to cover the rice and let it boil down again (just be sure to STIR). Continue to stir regularly. Total cooking time should be about 90 minutes. Serves 8-10.
