spinach and wild rice

Ingredients
1 cup prepared rice1 tomato diced 1 slice 1/4 inch thick onion chopped1 large stalk of celery diced2 c baby spinach2 tbsp olive oil 2 cloves garlic minced
Directions
Prepare rice using brown and wild rice mixture 1/2 cup dry and 1 cup chicken broth. Combine bring to a boil, stir once, reduce heat cover tightly and simmer for about 50 mins. Meanwhile prepare remaining ingredients. When rice is done put 2 tbsp oil in skillet and add tomato,celery,onion and garlic cook about 2 mins. Then add spinach cover and simmer 5 mins. Mix in rice and serve.
