Chicken Minestrone Soup

2 boneless, skinless chicken breasts, pre-cooked2 T Olive oil2 cloves garlic, minced1 med onion, chopped2 stalks celery, chopped2 large carrots, chopped4 c. low sodium chicken broth28 oz can diced stewed tomatoes1 bay leafcayenne pepper (to taste)black pepper (to taste)1 t dried thyme leaves1 t italian seasoning1/2 c dried red lentils1/4 c orzo2 sachets of Knorr chicken bouillon
1. Pre-cook chicken by placing in 1 c simmering water. Cover and and continue simmering until cooked through. Chop and set aside. Keep simmer water to add to soup later.
2. Saute garlic, onion, celery and carrot in oil until onions are translucent.
3. Add tomatoes, broth, bay leaf, thyme, cayenne, black pepper and italian seasoning and bring to a boil.
4. Add lentils and orzo and simmer for about 30 min.
5. Add cooked chicken, simmer water and bouillon and simmer for another 30 min.
6. Add frozen peas a few minutes before serving.
Makes 12 - 1 cup servings.
