Panko Crusted Salmon for 2

2 tablespoon honey mustard or sweet-hot mustard2 tablespoon fresh chopped flat leaf parsley2 tablespoon fresh dill¼ cup Panko bread crumbs2 tablespoon Parmesan cheese2 (3 ounce) wild Pacific salmon filetsSalt and pepper to taste
1. Preheat the oven to 400°F (convection or regular). Set the salmon on a foil-lined baking sheet skin side down. Sprinkle with salt and pepper. Spray with cooking oil.
2. In small bowl, mix the panko with the parsley, dill and Parmesan.
3. Using a small spoon, spread the mustard on the salmon; top with the panko mixture pressing into the salmon filets.
Roast the salmon for 12-14 minutes (test at 10 minutes) or until it is almost completely firm to the touch and flakes when poked with a fork. Serve at once.
