Jamie's coconut & lime chicken

Ingredients
800gms chicken breast (no skin) cubed1/4 cup lite cocnut milk1/2 cup shredded coconutSnow peasred capsicum (bell pepper) dicedCherry tomatoes Halvedred hot chilli pepper to taste1/2 cup soy Sauce1/2 cup lime juice1 tablespoon sugar4 serves egg noodles
Directions
Cook noodles according to packet and set aside to drain.
Stir fry chicken in two or three lots.
Add coconut milk and shredded coconut to chiken and stir fry until coconut starts to brown, remove from pan.
Combine soy sauce, lime juice, sugar and chilli in small bowl.
Add cooked noodles to pan, pour in sauce, add vegetables and combine well in pan then add in the chicken and combine. Serve immediately. Makes four large portions.
