Greek Lentil Soup

Ingredients
2 Tbsp olive oil2 cups chopped onions1/2 cup chopped celery2 Tbsp minced garlic8 cups water3-1/2 cups beef broth2-1/2 cups lentils (rinsed)1/2 cup barley1-1/2 tsp salt1 tsp pepper1 tsp dried oregano1 can (16 oz.) chopped tomatoes1 pkg (10 oz.) chopped frozen spinach
Directions
Heat oil in soup kettle and add onions, celery and garlic and cook until tender (about 8 minutes). Add water, broth, lentils and barley. Cover and bring to a boil. Reduce and simmer 1 hour until lentils are tender. Add salt, pepper, oregano, tomatoes, and spinach. Simmer for 5 minutes until heated through. Serve. Makes eight 2 cup servings.

    Yummy, easy dinner. I used vegetable broth instead of the beef broth and rice rather than barley, to accomodate all family members' tastes. I wouldn't have minded it a little spicier, but overall the recipe is a winner! - 6/18/07
