Curried Sweet Potato Wedges

2lbs sweet potatoes 1 tbsp canola oil 2 tsp curry powder1/2 tsp saltpinch cayenne

preheat oven to 450 halve the sweet potatoes and cut each piece lenghtwise into quarters. toss with the oil curry powder salt and cayenne in a large bowl

arrange the sweet potatoes in a single layer on a large nonstick baking sheet bake turning once until browned and crisps 35-40 minutes
