Barley Apple Muffins

Ingredients
2 eggs1 cup low fat milk1.5 cups apple, grated4 cups barley flour2 tsp baking powder1.5 tsp cinnamon1.5 tsp nutmeg1/4 cup walnuts, chopped1/4 cup yogurt, plain, low fat1/2 tsp vanilla extract
Directions
Preheat oven to 375 F.

Mix dry ingredients. Mix wet ingredients. Mix them together, stirring until just mixed. Oil two tart tins and coat with flour. Bake for 20-25 minutes at 375 F. Allow to cool before removing from tin.
