Chocolate Mousse with Raspberries

8oz dark chocolate chips1 1/3 cups nonfat milk2 teaspoons of unflavored gelatin1 teaspoon of vanilla extract4 cups of Cool Whip (regular, lite, or free...whichever you prefer)Raspberries
Mix the milk, vanilla and gelatin in a sauce pan. Let sit 2 minutes. Heat at medium heat until small bubbles start to form around the edges; do not let boil. Remove from heat and add chocolate chips. Cover and let stand 5 minutes. Stir until chocolate chips are completely melted. Transfer mixture into a medium mixing bowl and place in the fridge for 30 minutes (or until set). Gently fold in 4 cups of cool whip (thawed). Separate into individual serving sized containers, layering the mousse with raspberries (should be about 2/3 cup mousse in each serving). Place back in the fridge for 2 hours and enjoy.
