Cauliflower Soup

1 whole cauliflower (about 4 cups)2 Tbsp fat-free margarine or yogurt spread4 Tbsp whole grain flour4 cups chicken stock/broth1 cup cream (white and dried milk works too)2 egg yolks beaten
Makes 6 1 cup servings.
Divide cauliflower into small pieces.
Melt margarine in large pan, remove from heat and throughly stir in flour. Cook for 1 minute.
Stir stock into flour mixture. Add cauliflower and bring mixture to a boil.
Simmer for 30 minutes.
Add cream or milk mixture and add egg yolks. Season with pepper and/or salt.
