Curried Chicken and Black Beans

Ingredients
1 lb chicken breast (no skin or bone)1 can black beans, drained1 tbs green curry paste1 cup water1.5 cup sweet yellow onion, sliced2 cloves garlic, mashed or put through garlic press5 tbs fish sauce1 tsp salt (or to taste)1 tsp white pepper (or to taste)2 tbs olive oil
Directions
Cut chicken into thin strips and set aside. In a sauce pan, combine garlic and olive oil. Cook until garlic begins to be fragrant, or slightly transluscent. Add chicken and onion. Season with salt and white pepper to taste. Cover and cook on medium-high heat until chicken is cooked through.

In a seperate bowl, combine water, curry paste, and fish sauce. Stir well.

When chicken is done, reduce heat to medium and add curry mix to pan. Heat through, then add black beans. Heat through again.

Serve on rice or in a burrito.
