curried chick peas, spinach, tofu

Ingredients
4 cloves garlic, chopped2 tbsp chopped fresh ginger1 medium onion, chopped1 TBSP canola oil2 TBSP curry powder1/2 tsp cayenne pepper1 15 oz can chick peas1/2 block extra firm tofu, chopped into 1/4 in pieces2 c chopped fresh spinach1/2 c V-8 juice1 tsp lemon juice
Directions
Saute garlic and ginger in canola oil for 3-4 min, add onion and saute until soft over medium heat. Add curry powder and cayenne and saute another minute. Add chick peas, V-8 juice, and lemon juice. mix well. Add spinach and cover for 3-4 minutes until spinach is wilted. Mix the spinach in, add tofu, and cook over low heat for another 10 minutes until heated through.
