Virtually Fat-free Hot and Sour Soup

Ingredients
1 clove of garlic1 tsp grated fresh ginger1 small shallot sliced into matchsticks1 small carrot sliced into matchsticks1 short piece of celery sliced into matchsticks1 small bird's eye chilli. finely chopped1 tsp vegetable stock mixed into2 cups of hot water3 slices cooked chicken breast1 portion rice noodles1 tsp oyster saucejuice of half a lemon (or one lime)
Directions
Prep all vegetables.

Simultaneously in two separate saucepans:

1. Cook noodles according to pack directions. When they're done, strain, rinse and place in large soup bowl.

2. Bring the stock to the boil, add all vegetables and let simmer while you're preparing the noodles. Add chicken, oyster sauce and the lemon/lime juice. When chicken is warmed through, using a slotted spoon, arrange vegetables and chicken on top of the noodles. Pour the consommé over and serve.
