Green Posole Soup

Ingredients
1 onion, chopped1 to 3 anaheim chiles, chopped6 boneless, skinless chicken thighs, cut into 1" pieces1 24-oz box low sodium chicken broth1 14-oz can diced tomatoes with no salt added1 large can of hominy (corn processed with lime)3 cloves garlic, minced2 tablespoons ground cumin1 tablespoon dried oreganosalt and fresh ground pepper to taste (I added about 1 tsp of each)1/2 cup Greek yogurt, plain, fat-free
Directions
In large Dutch oven, on medium high heat, saute onions and peppers until golden brown. Add chicken pieces, saute until browned and cooked through. Add all remaining ingredients except yogurt. Bring to boil, then lower heat to simmer and cook an additional two hours at low simmer. Just before serving, add yogurt and stir in. Makes 10 1-cup servings. Makes a meal with crackers or quesadilla on the side. Suggested garnishes: shredded cheese, additional Greek yogurt.
