Emily's Cauliflower au Gratin

Ingredients
********* additional ingredient - 1/2 tsp. dry mustard1 head Cauliflower1 Tbsp Smart Balance2 Tbsp flour - whole wheat if preferred1/2 tsp dry mustard3/4 cup skim milk4 Tbsp lowfat or fat free combo cheddar cheese
Directions
Break the cauliflower apart and steam until soft. Meanwhile melt the Smart balance in a saucepan over low heat. Blend in flour and dry mustard; cook over low heat until mixture is smooth and bubbly. Stir in milk and heat to boiling, stirring constantly for 1 minute. Stir in cheese over low heat until melted. Pour over cooked cauliflower and serve. Make 4 servings.

Note: original recipe using 2 Tbsp non fat cheese and 2 Tbsp low fat cheese was 96 calories 12g carbs 5 g sugar.
