Chop Suey

Ingredients
12 oz Celery (about 5-6 average size stalks)6 oz White Onion 6 oz Green Pepper2 Tblsp Vegetable Oil (enough to coat bottom of large skillet)1.5-2 lbs Beef Stew Meat 1 Tbsp Soy Sauce (to taste)4 cups cooked rice
Directions
Add oil to large skillet and set to low temperature. While oil is warming dice celery, onions, and green peppers. Once oil is hot, add vegetables to pan and sautee until soft. Add bite size pieces of stew meat to vegetables and cook until meat is browned but not done. Add water to cover meat and vegetables. Allow to simmer for 15 minutes covered. Stir occasionally. Uncover and simmer an additional 15 minutes. Continue alternating covered and uncovered in 15 minute increments until broth reaches the desired richness, you may add water as necessary to keep meat and vegetables covered. Add soy sauce to taste. Serve over rice.
