Carrot Potage

Ingredients
1 lb carrots washed & chopped (leave skin on )1 medium washed potato with skin chopped1 medium onion1 oz butter2 pints chicken stock1 bayleaf1 tsp paprika1 tsp oregano
Directions
Melt butter & saute onion until clear. Add rest of vegetables & saute for 1 minute. Add 2 pints chicken stock & rest of ingredients. Bring to boil & simmer 1/2 hour or until tender. Remove bay leaf then blend the soup. Reheat & serve. You can add a little whipping cream at this point although it will increase calorie count.
