cuban black bean soup

Ingredients
sweet potato 2 cups cubedCelery, raw, 2 cup, diced Carrots, raw, 1.25 cup, chopped Onions, raw, 1 cup, chopped Canola Oil, 1 tbsp Canned diced Tomatoes, 3.5 cup or 1 28 oz can Minced Garlic, 1 tsp Tomato juice, without salt added, 3 cup Bush's, Black Beans, 1.75 cup Orange Juice, 2 cup salt and pepper to taste you can add cilantro and a squeeze of lime juice for some zip
Directions
just add all ingredients to a stock pot or crock pot and cook on low till all veggies are soft .I like to add a whole quartered navel orange to the pot as well discard the orange before serving.
