Chicken Mung Stew

Ingredients
Ginger Root, 40 gramsMung Beans, 100 gramsOnions, raw, 2 medium (2-1/2" dia) Garlic, 4 clove Red Ripe Tomatoes, 5 medium whole (2-3/5" dia) Jalapeno Peppers, 2 pepper*Lemon Juice, 30 mLCoconut Milk 200 ml Light (half can), 1 serving Water, tap, 300 mL Cilantro, raw, 4 tbspChicken Thigh, 6 thigh, bone and skin removedOlive Oil, 2 tbsp
Directions
Season chicken in ginger and lemon - marinate.
Boil Mung Beans for 35 minutes and mash.
Fry chicken in oil, set aside.
Dice and fry onions and garlic in in same oil used for chicken for five minutes, then add diced tomatoes.
Mash and add mung beans, add coconut, lemon and chicken and simmer for 35 minutes.
