Laura's Hearty Beef & Barley Soup

Ingredients
1 lb Ground beef, lean1/2 c Onions, chopped2 cloves Garlic, chopped46 fl oz can V8 Vegetable Juice Cocktail 14.5 oz can Crushed Tomatoes1/3 c Barley, quick or pearled (uncooked)1 c Carrots, chopped 3/4 c Celery, chopped1/4 tsp Black Pepper1/2 tsp Oregano1/2 tsp Basil1 Bay Leaf1 c Peas, frozen
Directions
1) Coat large dutch oven lightly w/ cooking spray. Place on stove top over med-high heat.
2) Add ground beef and brown.
3) Add onion and garlic, cook until translucent.
4) Add V8, crushed tomatoes, 2 c water, barley, carrots, celery, and spices.
5) Bring to boil, reduce heat to simmer, and cover.
6) Simmer for 30 minutes.
7) Add frozen peas. Return to simmer and cook for 10 minutes.
Makes approx 12 1-cup servings.
