My Chicken Picata

Ingredients
2 chicken BreastCapersButterWhite WineFlourLemon JuiceBrown RiceSpinach
Directions
Cut the chicken breast in half, make the pieces about 1/2 inch thick.
Lightly coat with flour on both sides. Put half of the butter in a frying pan, brown the chicken on both sides, put aside in heated oven just to keep warm.

Dont clean pan in between... Add 1 cup of chicken stock and 1/2 cup of white wine, a few squirts of lemon juice. I always play around with the taste. let these ingredients simmer down then add the capers. get to your desired thickness.

As that is cooking boil the water for your rice and steam your spinach, then put all on a plate together with sauce over it!! So Yummy!!!
