Hot and Sour Soup

4 cups Kitchen Basics Chicken Stock2 celery stalks-sliced1 can waterchestnuts-drained1 can bamboo shoots-drained2 c white mushrooms-sliced1 c bean sprouts-fresh1 T soy sauce3 T Rice vinegar1/2 t sesame oil1 t chili paste 1 garlic clove
Put all ingredients into a stockpot. Simmer about 30-45 minutes or until the mushrooms are done. Serve.
I sometimes make a double batch & freeze individual portions for lunches. Also, heat can be adjusted with the chili paste to meet individual preferences. The one I use is from the Asain market and is hotter than the ones from our grocery store, so adjust as needed. Sometimes I will bake wonton chips to dip in it also.
