Coconut curry rice Quick (serves 6)

Ingredients
.25 cupOnions, raw,, chopped 1 tbsp Curry powder, Knorr Instant Stock mix chicken (1 tsp)2 cup Kraft Minute Rice Brown (2/3cup cooked .5cup raw), Salt, .5 tsp Pepper, black, .5 tsp Coconut, raw, .25 cup, shredded
Directions
Combine rice, onion and spices in pot with 2 cups of water. Bring to a boil, stir in coconut and cover. let sit 5 minutes until rice is tender.
Can add green peas or chick peas to add variety
