Quinoa Burgers

Ingredients
2 cloves garlic, minced1/2 cup pine nuts or pumpkin seeds1/2 cup fresh cilantro1/2 cup raw, diced onion1 cup cooked black beans1 tsp salt3 cups cooked quinoa (1 cup dry)1/2 cup diced sweet red pepperBread crumbs or rice flour (if gluten free)2 Tbs. olive oil
Directions
Cook onions if desired. Combine everything except quinoa and bread crumbs/rice flour in food processor or blender. Mix blended mixture and quinoa together. Divide into 6 "burgers", roll in bread crumbs or flour to make a "crust". Pan fry in olive oil until browned. Adapted from Ancient Harvest Quinoa Recipe folder. If desired, replace cilantro with fresh oregano and add 1 Tbs chili powder and 1 tsp cumin powder.

    These are fantastic. Next time I will make a big batch, cook them 1/2 way and freeze them in FoodSaver (upper-end version of the Seal-a-Meal) bags and have them for a quick dinner. Thank you for a great vegan "burger" recipe. These will be great for next summer on the grill!! - 11/9/12

    HAHAHAHA!!!! i tried to make the patties but ended up with a great "HASH" substitute. At least it's still edible = } I'll have to play with this one some more. I chilled the quinoa this time. Next time after it chills, I'll make the patties and chill/freeze them a bit before flouring and cooking. - 9/10/17

    The only suggestion I'd make is that olive oil has a low heat point and shouldn't be used for frying. Sesame oil or walnut oil are both excellent alternatives (and the sesame oil is on the anti-angiogenic list!) Otherwise, I can't wait to try this recipe. I saw the same TED talk! - 12/1/14
