Mushroom Omelet - Level II P90X

Ingredients
egg white, fresh, 8 large (remove)Pepper, black, 1 dash (remove)Mushrooms, fresh, .75 cup, pieces or slices (remove)Scallions, raw, 2 tbsp chopped (remove)*Bell pepper, orange (1 large - 3-3/4), .25 serving (remove)*weight watcher mexican style cheese, 85 gram(s) (remove)*Sour Cream - Non Fat Naturally Yours, 4 tbsp (remove)
Directions
Wisk egg whites in small bowl. Add pepper to taste.
Spray small non-stick sautee pan with cooking spray. Sautee veggies until tender on med heat.
Add egg mixture. Cook until bottom sets and then fold in cheese. Cook a bit longer.
Top with sour cream.
