Lentil Soup with Minted Yogurt

Ingredients
1 tbsp olive oil2 medium onions, chopped15 baby carrots, chopped3 cloves garlic, minced4 tsp curry powder2.5 cups dried lentils9 cups vegetable broth1 1/2 cups plain non-fat yogurt1/4 cup fresh mint leaves, chopped1/4 cup fresh cilantro leaves, chopped1/4 cup fresh basil leaves, chopped
Directions
heat oil over med heat. Add onions, carrots, garlic and saute for 10 minutes. Add curry and lentils and stir for 2 minutes. Add broth and bring mixture to boil. reduce heat, cover and simmer for 75 minutes adding more broth as needed. Enjoy!
