Stuffed Cheesy Tomatoes

Ingredients
3 Red Ripe Tomatoes100 Grams Cottage Cheese 1%Mozzarella Cheese 80grams(part skim milk)Cheddar Cheese (1 cup shredded)1 small onion1 spray Parkay Margarine spray100 grams portabella mushrooms0.5 cup green peppers (bell, variant yellow peppers)
Directions
Chop mushrooms, green peppers, onion and stir fry in wok or pan in 1 Spray of Parkay margarine spray. Once mushrooms are cooked, gradually add cottage cheese and mix into pan on low heat. Remove pan from stove. Grate Cheddar & Mozzarella cheese and combine them.
Take 3 Red ripe tomatoes and slice off the tops, leaving at least 3/4 of the tomato over. Scoop out the flesh of the tomatoes leaving them empty. Spoon Mushroom, onion and pepper mix into the tomatoes and cover with the mixture of Mozarella and cheddar cheese. Grill for 15 Minutes in over at 180 degrees. Remove from oven and serve hot.
