Mediterranean Vegetarian Pasta Salad

1/2 block of extra firm tofu1 red bell pepper1 can artichoke hearts, drained (not packed in oil)1 sm can sliced olives8 oz dry rotini (I use Barilla whole grain)1/2 cup crumbled feta cheese4 tbsp olive oiljuice of one lemon3 tbsp red wine vinegar2 tsp italian seasoninggarlic powder to tastesalt to taste
Cook pasta according to directions, drain and let cool. Chop the red bell pepper into bite sized pieces, then saute in 1 tbsp of the olive oil. Chop the tofu into bite-sized cubes. Mix the tofu, peppers, pasta, olives, artichoke hearts and feta in a large bowl. Make the dressing by mixing the remaining ingredients well in a small bowl. Add the dressing to the large bowl of ingredients and toss to coat. Makes about 5 lunch-sized servings, or more as a side dish.
