Alaska Omelette

Ingredients
1 small can salmon, drained and flaked2 lg eggs2 tbsp sour cream1/2 tsp fresh tarragon, chopped2 tbsp buttersalt and pepper to taste
Directions
*Drain salmon and set a side
*Beat together eggs, sour cream and tarragon
*Season lightly
*Melt butter in a non-stick skillet
*Pour in egg mixture and cook over moderate heat until based is set.
*While base is setting , pre-heat broiler
*Arrange salmon over the soft top of the omelette
*Place pan under broiler until omelette is set
*Loosen the omlette in the pan and carefully fold in half
*Slide omlette on to plate and serve.
