Shrimp Fried Rice

Ingredients
3 cups cooked, cold white rice4 green onions, chopped1 pkg SunBird fried rice seasoning2 tsp soy sauce2 eggs16 oz small shrimp, peeled, deveined and cookedfrozen english peas
Directions
Spray a nonstick skillet with a small amount of nonstick spray. Saute cold rice and green onions for 1-2 minutes. Add seasoning ans soy sauce stir fry 1 minute more. Move rice to the side of the pan. Add eggs, scramble and stir into rice. Add peas and shrimp. cook 1 minute more. Remove from heat and cover. Let stand unitl peas are warmed through.

Makes 6 1 cup servings.
